Home Fries 1 Recipe


Ingredients
•4 large unpeeled Idaho potatoes (about 10 ounces each), well scrubbed
•4 tablespoons unsalted butter (1/2 stick)
•2 tablespoons olive oil
•1 green bell pepper, seeds and membranes removed, finely chopped (about 3/4 cup)
•2 shallots, peeled and minced
•3 tablespoons minced Italian parsley

Directions
1.Heat oven to 375°F.
2.Halve potatoes lengthwise and place them, cut side up, directly on the oven rack. Roast until the entire cut surface of the potatoes has a golden-brown crust and the tip of a paring knife easily pierces the underside, about 45 minutes. Let potatoes cool until they are easy to handle, then cut them into large dice; you should have about 8 cups.
3.Melt butter with oil in a heavy sauté pan over medium-high heat. When mixture foams, add bell pepper and shallots. Continue cooking until vegetables are softened and edges are beginning to color, about 3 minutes.
4.Add potatoes, tossing to coat, and cook until heated through, about 6 to 8 minutes. Turn them only once or twice so that they have a chance to get crisp. Liberally season potatoes with salt and pepper, and toss with parsley.

Preheat your oven to 375oF. Make a mixture of broken walnuts, butter, graham cracker crumbs and cinnamon. Take a 9 inch spring form pan and spread out this mixture on the bottom tightly. Beat the eggs well and blend them along with cream cheese, sugar, salt, almond extract and vanilla essence. Beat thoroughly till you get a creamy mix. Now add sour cream and pour the entire mixture on top of the crumb layer.

Keep this in the oven and bake for 35 minutes or till you know the cake's ready. Take it out and let it cool. Refrigerate this and add topping when you serve.

•Minced Onion - ¾ cup
•Beef flavoured instant bouillon - 1/3 cup
•Onion powder - 4 teaspoons
•Sugar - ¼ teaspoons
•Celery salt - ¼ teaspoons
•White pepper - 1/8 teaspoons

That's very simple. Just combine all the above ingredients and keep in an airtight container. You can use this for up to six months.

Procedure to make the burger
Heat up the grill and get it ready. Blend together minced beef, tomato sauce and onion soup mix and gradually mix. Make eight sets of patties from this mixture. Put these on the grill and cook for about 19 minutes making sure to turn them over once. Cook till they reach 160o on a meat thermometer.

Butter the insides of the burger buns and grill the buns when the burgers are almost cooked. Place the burgers inside the buns and top up with cheese, tomatoes and other toppings you like.

Your grilled onion burger's ready to serve. Relish the tangy flavour of onions in your burger.

Quinoa Stuffed Poblano Pepper Recipe


I've been cooking more vegetarian and even vegan recipes lately. One reason is the Meatless Monday effort sponsored by the John Hopkins' Bloomberg School of Health. The idea is to help reduce meat consumption by 15% in order to improve both the health of individuals and the health of the planet. But it also has a lot to do with challenging myself to try new things.

When it comes to cooking, I love a good challenge. Cooking with less meat or none at all inspires me. I do better with fewer ingredients than more ingredients. In a way, it forces you to be creative and think outside the box. Or in this case, the refrigerator. You know the saying, necessity is the mother of invention? It always reminds me of my experiences as a babysitter back when I was a teenager. At some point while babysitting either I, or the kids I was watching would get hungry. It was sometimes a challenge for me to come up with something tasty to eat based on whatever I could find in an unfamiliar kitchen.

Stuffed peppers are an acquired taste. I like them, but my dad doesn't. I know this because when I was growing up we only ate them when he was out of town. If you like the earthy flavor of roasted peppers and quinoa, you will like this dish. It combines a number of vegetables with quinoa and nuts to give you lots of flavors and textures in each bite. The filling is basically a quinoa pilaf, so feel free to swap out the chard for another leafy green or change up the nuts. I used Roland red quinoa but I didn't think that it tasted much different from white quinoa. Originally I thought I would top it with cheese but upon tasting it, I didn't feel like it needed it. I also think you could make this without the sauce if you prefer. You know the drill, make this recipe yours.


Quinoa Stuffed Poblano Peppers
Makes 4 servings

2 poblano peppers, cut in half, seeds removed
1 cup water
1/2 cup white or red quinoa
1 Tablespoon olive oil
1/2 cup mushrooms, chopped
1/2 cup chopped onion
1 tablespoon finely chopped garlic
2 cups swiss chard leaves, shredded
1/4 cup pistachios, chopped
Salt and pepper
1 1/2 cups canned tomatoes, crushed and liquid

Preheat oven to 375 degrees. Combine water and quinoa in medium saucepan. Bring to a boil; reduce heat to low. Cover; cook for 15 to 18 minutes or until water is absorbed. Remove from heat.

Heat a large, nonstick skillet over medium-high heat, add olive oil. Saute mushrooms, onion and garlic, stirring frequently for 8 minutes or onion is tender. Stir in chard and let it wilt. Add cooked quinoa and season to taste with salt and pepper. Spoon mixture into peppers. Add the tomatoes and liquid to a baking pan large enough to hold the peppers. Tuck the peppers into the sauce and bake for about 30 minutes.
